Those look awesome and I am a believer that a neck roast is one of the best parts!
To the Original Poster - consider making this before you go and bringing some to your grandfather and sharing a meal, or offering to spend day cooking with him. I really wish I had some grandparents remaining to do this with. I am sure he would appreciate it.

Follow some of these suggestions and you will do just that! let us know how it goes and I refer back to my earlier post - bring him some or spend an afternoon cooking with him and just being present - it will mean a lot to him likely and you down the road.

Yeah, we're going to be going down to visit him at least once a month. We never thought he would outlive my Granny. She was diagnosed with a type of cancer in March, and in July they also diagnosed her with Leukemia. It went downhill pretty fast from there. We didn't want to take the kids to the funeral, so my wife stayed with them while I went.
His birthday was last week, turned 82, so we went to spend the weekend with him. He even joked on the phone before we went down that he didn't know who would cook, but we'd figure something out. It is just so sad to see him like that, but me and both of my sisters are going down almost every weekend so he has some family there for him. And some other relatives live a lot closer than we do and have been there some during the week. I love to cook, and don't mind doing so, especially for a crowd. He used to cook in the National Guard, but rarely stuff for just a few people, and his health has gotten to the point he just can't anymore.
Thanks to all for the suggestions. My mouth is watering and this turkey sandwich I had for lunch just isn't cutting it!

You are good people for doing this. Bring your children as well - he would probably enjoy that. We lost my last grandmother this past year but she was 90 and lived a great active life right up until she was diagnosed with cancer - went down hill pretty fast. My 18 year old son was hit the hardest and still deals with Greif over this as he was very close to her (his great grandmother). Good luck with all of this and take care of him!

ha! but if you want your wife to like it, look up a veal picatta recipe and cook the tenderized meat Picatta style.

Yeah it is only a 2.5 hour trip for us. We can go down friday after I get off work and be there not so late. We had to come back Saturday evening this time, but next time we'll make it the whole weekend. My whole family went. The wife and kids. And one of my cousins came over and brought her daughter as well. It does him good to see the great-grands playing.
He's now the only grandparent I have left. My other grandfather died of cancer in the early 90s when I was still a boy. My other grandmother died on New Year's Day in 2006. She suffered a stroke and was paralyzed on her left side for 9.5 years before she died. We had just seen her at Christmas and she was fine. Caught pneumonia and it was too much for her. That one hurt a lot. I wish she had lived long enough to see the great grands. My older sister didn't know it yet but was pregnant at the time with her first. It just makes us appreciate what little time we have left with them.
