Geauxpimp- You might want to secure a cooking rig and then do a smaller deboned pig for practice. There's a lot of places around here that sell them. Please support the local guys i.e. iverson(sp?) farms. I'm not certain what sizes they sell or exactly what # you're looking to cook.

It might not be a good idea to take on this task w/o running a practice round.
