I am thinking resort b/c I know we'll be tired of doing wedding crap for weeks and weeks and will just want to do nothing for a few days.. if it was just a regualar trip, I would vrbo it.

Grenada is one I haven't been to yet so I can't comment on it.
Caneel Bay, St John was a great recommendation and you're short ferry rides from the BVI which opens the door to Tortola, Jost van Dyke, Virgin Gorda and Anegada. You will need a passport to make these day trips and there are fees required by the BVI.

A bunch of people here will poo-poo going to a Sandals type all inclusive but if you are looking to straight relax, it is the way to go.
I went to one for five days a couple of years back right after we finished the first eighteen months of starting a new business. I was seriously as stressed as I have ever been. My goal wasn't to explore, shop, do sports or anything else. I just needed to chill.
The place was perfect. I told the butler to put umbrella drinks in my hand every time it was empty and to avoid speaking to me as much as possible. I literally drank, napped, ate, napped, drank, drank, drank, dinner, slept and repeated. It was perfect. They even disconnected the wifi server in my room at my request.
