So did anyone try out the Paleo concession stand by the Airplane?

Students at the Sept. 13 LSU football game will have the opportunity to gorge themselves on something other than nachos, hot dogs and popcorn when University biology junior Monica Bravo and renowned chef Robert Vasquez set up their tent outside the PMAC to serve exclusively Paleo meals. Bravo said Paleo diets consist of meat, vegetables, fruits and other non-packaged, non-processed foods.
After getting approval from the concessions supervisors at the University, Bravo established a joint venture with Vasquez, owner of Vive Cafe in Mandeville. Their concession stand, ¡Bravo for Vive!, opened at the Sept. 6 football game. Among the items served were barbecue pork wraps, kale chips and the chicken salad wrap that started it all.
“The real thing that I want to bring to everyone here is this idea of the farm-to-table movement,” Bravo said. “All of our food is locally sourced organic. All of our meat is antibiotic hormone-free.”
Bravo said she eventually hopes to expand her Paleo concessions to other university campuses.
“I see it going big. My dream is really to be in all stadiums,” Bravo said. “I want to be in Southeastern Conference schools. I want to bring an option so people don’t have to eat fried food for game day.”

I gotta tell ya'll, I'm surprised by how much I like the kale chips...

Kale chips recipe
Serves about 4, as a snack
Ingredients
1 big bunch kale;
2 tbsp cooking fat, melted;
1 tbsp lemon juice;
Sea salt and freshly ground black pepper to taste;
Preparation
Preheat your oven to 300 F.
Wash the kale thoroughly under lukewarm water, drain and pat it dry.
Cut the stems off of the kale leaves and cut the leaves to obtain chips of similar size.
Place the kale in a bowl and massage the melted cooking fat into them.
Season to taste with sea salt and freshly ground black pepper. Add the lemon juice and combine well.
Place the kale in a single layer on a baking sheet and place in the preheated oven for about 35 minutes, until crispy. Check on the chips about every 12 minutes and toss them to make sure none of them overcook. Some parts will still be soft and this is desired.
Sprinkle with extra sea salt if desired and enjoy.
