No real recipe, just a method. All measurements are guesses.
3 lbs ground meat ( hamburger, venison, chuck or a mixture)
6 T Mexine chili powder
4 T Gebhardt chili powder, or other good brands( you can add the chili powders 20 minutes apart if you wish)
4 cloves garlic, minced
2 or 3 jalapeño peppers, with seeds, minced
2 onions, very fine minced
1 Hatch chile, very fine minced
1/4 cup cilantro, vfm
2 t oregano
1T cumin
1 Hershey bar, no nuts. Most important frickin step.
1/2 cup masa or corn meal
3 cups, or more, beef stock
Salt to taste
Brown the damn meat, adding the onion in the process. Drain all but a few T of the fat. Add the peppers, spices, and seasonings. Then add the stock after a few minutes. Add the Hershey bar. Bring to a low boil, cut to a simmer and add more stock if it's too thick.
Simmer 30 minutes to an hour. Taste it. Adjust all seasonings. Make corn bread. Eat it.
