Geology would be good. You could finish in 2 years since you should already have most of the pre reqs via your pete classes.

Another option would be construction management. Without summer classes, it would take 5 semesters, with summers and intersessions, you should have enough pre-recs to finish in a year and a half. It's a good degree with a lot of job prospects, angreat student association, and unriveled alumni support.

Both of these programs are also offered as masters programs so if you want to finish your undergrad, you can always go back.
