Cut into pieces about the size of your index finger, roll in yellow mustard and your favorite fish fry mix with black pepper added and then fry.

I've cooked it on the grill with Italian dressing and Tonys's before. Sushi is awesome. Actually made a Cobia Tartar same method as tuna that was very good. I was looking for something a little more creative. Found a parmesean crusted Cobia recipe on the web that I am going to try tonight along with sushi and tartar.

Best I ever had was grilled with sage and oregano, along with the usual salt and pepper. Just don't overcook it and it's going to be great no matter how you choose to season or cook.
