I'm close to your age and build. I alternate. I do the most weight I can do for 5x12 for a few months. Then I change over to a 5x5 for strength for about 5-6 weeks.
I work legs, shoulders, arms once a week. Back and chest twice.

I was going to say power clean but board consenus seems like it's not recommending cleans

If it's a consensus on the OT with regards to weightlifting that you shouldn't do something, odds are it's exactly what you should be doing.
Anyone advocating NOT implementing power cleans into your workout has a strong case of the weak. No one is saying you should be power cleaning or snatching 3 days a week at your age, but mixing in full-body, complex Olympic lifts into anyone's workout is a no-brainer.

Do stronglifts 5x5. And lift as heavy as you can. Low weight high rep is bullshite.
Lift heavy shite and put it back down. To gain muscle you need to get stronger. You get stronger by lifting heavier shite.

I think your statement disproves itself.

Step 1. Don't get any advice from this board
Step 2 while it's not impossible but it's very hard to gain muscle mass only without some unwanted fat.
Basics on weight gaining and weight lose is calorie intake. to lose fat you need to take in less than you burn and to gain weight you take in more than you burn.
To put on muscle mass you need to up your calorie intake. You can't gain weight without eating. It's that simple. It's hard as crap though to eat 4k calories a day of clean food. The prep work is a pain. But it's got to be done
As for as rep ranges that high rep stay toned heavy weight get bulky is pure horseshite. If you are 50 and can still rep 300 on the bench then do it. Make your muscles scream for mercy. But you have to eat right or your gym time is useless.
Once you get the mass you want then pull back on your calories to a maintenance level.
