Tonight I attempted my variation of Cajunate's smothered crawfish and andouille.
Cooked some andouille and set aside.
Made a roux with andouille drippings, butter and flour and once browned added onion, bell pepper and celery.
Added garic, chicken stock and the cooked andouille.
Then added the crawfish.
Finished dish. Sorry for the sloppy plating.
