Mutant powers do not manifest until your teenage years in most cases. Hence the opening scene of X2 with Angel cutting his wings off. Or the entire Jean Grey plotline.

It also makes it a more clear analogy for homosexuality.

Bro, I'm gonna go ahead and call out on this one. X2 did not have Angel, you're thinking of that awful third movie I will not speak of.

Depends really. Traumatic events, puberty and other things trigger then. Not necessarily age.

Race is the classic subject they are critiquing, not homosexuality.

Or better said: Difference, which manifests in both.
