Cajuns are descendents of a group of French Colonists who migrated south from Canada in the 17th century.
Creoles are descendents of people who are of mixed African and French and/or Spanish descent.
The groups were in different parts of the state and are separate ethnic groups with very different cultures.

Creoles were originally French citizens who owned plantations in Hispaniola and the like who were white and ended up in NOLA, it evolved into meaning of mixed descent or race by some. Its style of cooking is more Continental French style with spice. Cajun is derived from Acadian region of Canada and is in reference to the people of Southwest Louisiana whose forebears were forced to leave ending up in Louisiana.

Junior High version...
A Creole was a European who was born in the new territory... it has nothing to do with race, which is the thought of many people.
Cajuns come from the French Canadians(Acadia) expelled by the British, who eventually found refuge in Louisiana.
