Fried eggplant

I am new to tigerdroppings so I am still trying to figure out how this website works. Anybody have a "different" technique to frying eggplant? Thanks in advance.

Tried one today that was GREAT.
Slice eggplant, run under water in a colander. Awhile. Then dip in scrambled eggs, "batter" with parm, Romano. Put on baking sheet. Put a little shredded cheddar on the top of each. 425 for 20 min.
They were wonderful. Not soggy. Cooked perfectly.

Flour, egg wash and seasoned panko is my usual method.
I've been roasting thick slices lately, though, and really enjoying it.

If making eggplant parm, I cut it in discs. If eating straight up fried, spears is the way to go.

2 by 2 inch cubes skin off. Soak in milk and seasoning over night. Coat in equal parts semolina corn flour and ap flour. Fry at 350. Longer than you think. Crispy on the outside molten on the inside
Serve with tzatziki or marinara

Creamy on the inside and crunchy on the inside is outstanding.
I don't care for fried zucchini. Eggplant is far better to me.

I also love thin Milanese style with season breadcrumbs and eggwash. Also with tzatziki or marinara. Pretty much how i cook it for eggplant parm

Grilled thick sliced eggplant is my favorite way overall
Inch and a half thick slices. Salted a couple hours ahead then wiped with paper towels. Evoo minced garlic thyme salt and pepper. Grilled hot and riding the fine line of burnt. So good

Haven't grilled them, but that's very solar to how I roast them. Like candy.

pan fried eggplant, deep fried eggplant, grilled eggplant, roasted eggplant, baba ganoush, eggplant parm, eggplant soup, sous vide eggplant, tempura eggplant, eggplant in garlic sauce, pickled eggplant, marinated eggplant. I love eggplant

Slice and soak in salt water to get rid of the bitterness. Then bread and fry.

Yes..salting ahead of time is a must
