Why aren't you putting the grill facing the pool? You're gonna spend most of your time cooking there, and it would be nice to be able to see everyone while you're cooking.

Also, a sink is easier to plumb on the outside wall

The grill goes on the outside wall and not the Island/bar area. If you put the grill there you would loose all the bar seating. No one wants to hang out behind a BBQ pit. You may not need a vent hood with the structure being open on 3 sides but take in consideration wind. If you do a hood put the grill and the primo closer together. This way you can get one big hood or make a custom hood. You want 6" of overhang on either side of the grill/primo. I wouldn't mount the primo in the granite, if something happens you might need a new primo and new granite. There is a nice 30 x 15 drawer that goes nicely under kamado's. What grill are you going with? Is there an ice maker in the kitchen? Post your email I can help you with equipment.

How often are you actually facing your grill other than to check on food and turn occasionally?

Also, I prefer not to have smoke from grill and Primo in the middle of where we will sit.
