Do photon torpedoes serve any function that phasers don't?

Knowledgeable Star Trek fans, help he out here. Seems like Phasers can do anything a photon torpedeo can do, and maybe even do it better. What am I missing.
Ad while we're at it - what weapon arrays have the upper hand - Star Trek, Star Wars, Battlestar Galactica?

I always thought, perhaps mistakenly, that phasers were best used for depleting a ships shields but would have a vastly decreased effect on the hull, and vice versa for photon torpedoes.

Couldn't use phasers in Star Trek The Motion Picture when they were caught in the wormhole due to the new engineering that had the phasers tied into the warp drive, so they had to use a photon torpedo. Hence the discussion that ensued between Kirk and Decker.

Strictly comparing weapon arrays, the death star's primary weapon is awfully formidable.

Phasers require more energy - photons (and quantums) can do more against shielding, can be modified, pack a bigger punch - although not as accurate.
