I don't do either. I slice it up, then brown it in a skillet before adding it to the red beans. A lot of times I'll brown trinity in the same pan to add to it.

Boiling sausage is never ever the right answer. Boiling any meat is a sacra lodge.

This is key. How you brown it is up to you, but you need that maillard reaction to occur. Boiling sausage does not give you this.
