I had to do it last summer. I called the guy who would have been my boss and told him. I was very nervous and figured I was burning the bridge but I wanted to tell him and not email.

Fwiw, don't think they would cut you just as fast. It's business. Do what's best for your family.

You are definitely not the first person to accept a counter offer... just tell them straight. It's not like you will be removing a huge cog of their operation by 'leaving'. They'll survive.
