Hmm, not too sure about side of the road fishing. I'd say maybe drive toward/to Cocodrie and stop somewhere off of Hwy 56. Going toward Cocodrie, the left side should be Bayou Little Caillou. We used to have a camp around there and we fished using a Kahle hook, 1 to 1.5' leader w/ a half or 3/4 oz sinker (guessing there)...used dead shrimp or cracked crab or croaker and fish the bottom. Would normally pick up a red or drum here and there. If you find an open area, the other side should be Lake Boudreaux and have more shallow grassy areas...could probably throw a popping cork there.
ETA: There is a floodgate somewhere right off the road my uncle has pulled some
nice fish from...no idea where it's at, but I'm thinking Dulac or Montegut/Pointe aux Chenes
