Olive Salmon Loaf (pg 102)
3 cups flaked salmon
1/4 cup sliced ripe olives
3 cups bread cubes
3/4 cup milk
3 eggs, lightly beaten
2 tablespoons grated onion
1 1/2 cup minced parsley
1/2 cup lemon juice
1 teaspoon salt
Freshly ground black pepper
Combine all ingredients. Mix well. Pour into greased loaf pan or fancy mold. Bake in moderate oven at 375 degrees for 40 minutes.
Serves 6.
