Sunday, catch the street car out to City Park.
Start with coffee and beignets at morning call. Then let him climb the oak trees and hit up the play ground.
Rent pattle boats or the multi person bikes.
Then 18 holes of mini golf.
Finish with 3 or 4 hours at the little mini amusement park.
I live 5 miles from there and my kids never get tired of that kind of stuff.

Definitely go to the Audubon Zoo, take the street car one way and the riverboat the other.

I forgot about the Insectarium. I think the Insectarium is also run by the Audubon Institute? There may be a package deal for tickets to both the Insectarium and the Zoo with a ride between the two on the riverboat.
Then you can ride the streetcar back down St. Charles.
There's more for kids to do in New Orleans than I thought. Sounds like the two of you will have a great weekend as you dodge the Mardi Gras parades.
You may want to skip the Zoo, may not have enough time. I think the two of you need to make another trip.

If you're coming to the city without transportation and for a single day, absolutely skip the zoo. It's cool, but it's far from everything. All the other fun things (aquarium, IMAX, insectarium, ww2, cafe du monde jax brewery, steamboat/paddleboat rides (expensive, but fun/neat), cafe Maspero's (highly underrated- one of my favorite "touristy" restaurants in the city), French market, margaritaville, and the children's museum (though he sounds JUST too old to really enjoy that) are all real close to each other.
ETA- just read it's a multi-day trip. Take the streetcar to Loyola and walk to the zoo early that first morning. It's a really neat zoo. After that- walk around back of the zoo and check out The Fly and watch the boats pass on the river right there. It's a neat place.

Cheap thing that my kids like to do in NOLA is ride the ferry. I think it went up to $2 a person each way but they love it. Go at nigjt so you can see the skyline of NOLA from across the river. Takes 30 minutes to complete the trip

Serious question: are you riding on the City of New Orleans (MS to NOLA) or the Crescent (AL to NOLA). Reason I ask is that the Park Service used give in-train "tours" of the ecology / biology of the areas you pass. I'm sure with budget cuts and/or (insert your favorite political complaint here) those days may be long gone, but I sure enjoyed learning about all the history of the route along the west bank of Lake Pontchartrain and up through Southern Mississippi.
Example: where did Summit, MS get its name? Answer: because it was the highest known point along the original rail route between Memphis and New Orleans.
You might want to ask Amtrak if anything like that still exists.

Good. That route is a bit more "scenic", if only because it runs in the daytime ... or at least used to back when I could park at my office a block away from the NOLA station and take a $10 ride up to Jackson to see my family.
Good times. You two have a great trip, OK.
