Sauce piquant or stew with brown gravy?

Love me some tree rat stew. Especially in cold weather.

Can't go wrong either way.

Does that factor into the decision?
Serious question, not being a smart arse. Just wondering if one type is better than the other for different styles if cooking.
Every time I've cooked them, I've always had a mixed bag of both.

Stew/brown gravy and, a few pans of biscuits.

Yep. Makes a difference for me. Cat for gravy, fox in a red sauce.

Absolutely it factors into my decision. You can straight up fry and eat a cat squirrel. Try that with a big fox and it will take you a day and a half of gnawing. I cook then both in a brown gravy, but the fox squirrels take a good bit longer to get tender. If I was mixing all together I would par boil the fox squirrels first for a while. Or give them a run thru the pressure cooker.

I hear ya on frying.
With the 2 different types in either type of gravy...we just added the cats at a later time in the cook to compensate for the longer time needed for the fox to break down.

Pressure cooker ftw, except for young cats.

You can do that too. I think I might go blast some tree rats this weekend.

Got me want'n to as well. But that's highly unlikely. New to the area here and haven't scrapped up any hunting buddies yet
So I'd have to drive back to LA to do it and I ain't up for all of that this weekend.

i am always in favor of flash frying them in seasoned flour, then cooking down a brown gravy. serving over rice with a biscuit.
we will be having the same friday night at squirrel-a-palooza

That's pretty much what pops does. He's a squirrel cooking fool. He can also make a squirrel and dumplins that's of the chain.
