Mountain Biking Beginner Question

I like to hike and fish, but I need a hobby with a little more to it. Could also use some extra exercise.
Any suggestions for getting started? Mostly interested in local trail riding and exercise, probably not for a commute or anything too aggressive (at least in near term). Any suggestions for brands for an entry level bike with enough ability to keep for a while?
The only experience I have is riding through woods and whatnot on a 90s Mongoose (back when they were relatively expensive and sold in good shops), but otherwise I'm a beginner. I know Mongoose is worthless, what about GT and Diamondback and the like? They seem to still have some good products and poor products.
From my research thus far, I'm thinking a 29er in the 1000 dollar range. Have identified Fuji, Diamondback and the REI brand (forget at the moment) to seek out and try.

I'd suggest watching CL for a decent used bike before dropping a lot of money on a new bike

I bought a Specialized Rockhopper 29er a few months ago that I love. It's a really nice bike with great components for the price. I put some more street friendly tires on mine and it ran just under $1100 total. I think it retails for $899.

Mountain biking is a lot easier to get into than road biking. You can do basic trail riding with a Walmart mountain bike to decide if you like it. As you gain experience and decide you want to try more technical trails, you can upgrade your equipment. Of course, you can get a very solid Trek or Fuji for <$400.
I'd go simple/used and decide if its something you're going to enjoy before dropping a grand on a bike.

I own a Diamondback for mountain biking. It was a cheaper alternative with the specs that I wanted compared to a Specialized, because I wanted to make sure I stuck with it. The bike has held up good and I've put it through some shite over the last 2 years. The only downside to it is that it's heavy as hell. It weighs in at around 32 pounds. I'll be switching to a 29er when I upgrade.

I'm a nube mtn biker and I bought a trek X-caliber6 several months ago for around $700. Pretty happy with it so far, no problems.
