To reiterate and add to what others have mentioned:

1. Rooting just allows you to remove bloatware (system apps that normally can't be removed) and to install apps that require root.

2. You can leave it at that or flash a stock ROM that's been debloated, or in the case with my GS2, I initially flashed a stock ROM that removed the Carrier IQ corporate spyware.

3. You can have fun and flash custom ROMs that add a ton of options and make using your phone more convenient and fun.


Do your research and find out what recoveries are available for your phone. My favorite recoveries are 4EXT and TWRP, though the most popular in general is ClockworkMod (CWM). 4EXT and TWRP aren't available on nearly as many platforms as CWM.
