Volunteered to serve very casual breakfast christmas morning for family which consists of adults and kids. No one is a picky eater. Figured a breakfast casserole would be best but I am open to suggestions.

Crockpot Breakfast Casserole
I have done this the last few years. Damn good and easy plus it's different.

I make this breakfast casserole for breakfast/brunch gatherings all the time. easy, and people seem to enjoy it.

I think it would be a cool idea to have an "omelet station" like you see at casino buffets and such. Line up several bowls in your kitchen filled with potential fillings (ham, bacon, various cheeses, green onions, etc.) .. have 2 skillets on the burners and a big ol' mess of eggs and milk ready to go. Have everyone choose what they want in their omelet then whip it up.

I've done a breakfast taco station, where I make a big pan of scrambled eggs, and then put out bowls of crumbled breakfast sausage, bacon, cheeses, potatoes, salsa, green onions, etc. people made their own tacos. Seemed to go over well.

When I was a kid my dad used to make pigs in a blanket every Christmas morning.

Ziploc omelets. Everyone can put whatever they want in their omelet and they can all be ready at the same time so you can all sit down as a group to eat. If you have a lot of people you may need a crawfish type pot and burner to keep the water boiling when you add all the ziplocs.

We will be doing this also. The grandkids love it.
Also like to take regular canned biscuits , roll them out flat and tuck them into the cups of a muffin pan. Add a pinch of diced panchetta, a pinch of shredded parmesan and an egg yolk to each. Fold the dough over the tops and bake. Kind of like home-made kolaches.

I usually fix up a French Toast Casserole for things like that. You throw it all together the night before than bake in the morning.
2 cups brown sugar
1/2 cup melted butter
1/4 cup maple syrup
1 loaf of french bread (sliced)
5 eggs
2 cups of milk
1 tbsp vanilla
Night (or 8 hours) before:
Line a 9x13 dish with brown sugar. Pour melted butter over top of layer. Then add maple syrup. Place slices of french bread across dish. In a bowl beat eggs and 2 cups of milk. Pour over bread. Cover and stick in the fridge for at least 8 hours.
Morning/Day of:
Put in cold oven and turn oven on to 375 degrees. Bake for 45 minutes or until browned on edges of bread.
Just a FYI, it will rise and be a little soft when you pull it out of the oven. Don't freak out. It'll fall almost immediately. Let sit a couple of minutes before you serve. You can drizzle syrup or dust with powdered sugar but I prefer without.

We do sausage balls and garlic cheese girts every year for thanksgiving and Christmas, still get as big a kick out of it now as I did when I was 5

We do the sausage links wrapped in crescent rolls. Not sure if that's what you call pigs in blanket but they are heavenly and our family traditional as well
