one of the processors we use in Ms prefers for us to bring the deer in whole.

he skins it for $20 and debones it off the carcass.

I've deboned the hind quarters while hanging, never the shoulders though

Thats exactly what I do. Looks like a skeleton zombie deer by the time I am done with it. By far the easiest way and it takes up so much less room in the cooler.
