Your Turkey Day Leftover recipes?

Anything special that you do with turkey day leftovers other than just heat and eat?
Probably making Hot Browns tomorrow with the turkey leftovers. Saw a turkey corn chowder recipe that looked tempting as well.

So far, turkey and bacon sandwiches on rye or a reheat of all the foods for the full meal in smaller quantities.
Just made turkey gumbo last weekend, so probably not doing that, though I've considered a turkey soup of some sort.

I know I'm in the minority but I don't even like eating thanksgiving leftovers on thanksgiving day.

I always made gumbo, wanted something different this year. So when I roasted the turkey, I put tons of celery, carrots, onions and potatos. Then I made turkey carcass soup. Boiled turkey carcass for about 2 hours, strained (saving broth), pulled all meat off and added to broth, then added veggies. Reseasoned and served over rice. Huge hit.

I smoked two turkeys to have leftover meat to freeze for gumbo, jambalaya, turkey spaghetti, enchiladas and so on. We also take the carcass and make our own stock. The smokey stock adds delicious depth to any of the above dishes.

Hate to be boring and obvious, but a well made turkey sandwich is tough to beat.

If I had leftover cornbread dressing, I think I'd try to make some fritters or dressing patties out of it.
