This is what I'm saying. I have about $1,000 invested in a grinder, stuffer, smoker, and vacuum sealer. I make sausage from about 4 deer per year for myself, grind up another one or two for ground meat, and usually let a few folks borrow my stuff to do their own. Buy nice stuff and it will pay for itself in no time. The only thing about making your own is finding the time to do it. It takes me about 12-16 beers to do mine (I usually make sausage from 2 deer at a time), starting in the morning and taking the last of it off the smoker around 10-11pm.

My grinder also makes sausage. I guy the tubing at a local butches shop in bulk. Now that shite went way up.

Made my own sausage for the first time last year. Wasn't difficult, just a little messy.

-$25 for natural casing (enough for 100 lbs)
-<$50 bucks for a few boston butts (I make my sausage lean)
-$15 for seasonings.

You can EASILY make sausage out of a few deer with that for WAY under $300
