Alligator jambalaya recipes?

It's going to be like eating work boots.

ETA: If you want to cook different jambalaya, rabbits or doves are a good thing to try with.

If you want to cook alligator, sauce piquant is a good thing to try.

I'd try the alligator jamb by myself at home before I tried cooking it for other people.

Has anyone ever brined gator meat? Seems like it would help keep it from drying out, kind of like white meat chicken and turkey.

I've never used straight gator tail meat in a jambalaya, but Murray's in St. Amant makes an incredible green onion gator sausage that tastes great in jambalaya or on a po'boy.
