I think it helps your cheese mixture if you crack a couple of eggs in there. Gives it a richer taste IMO
I usually make a big batch if I'm going to make it. 32 oz container of ricotta and usually about 6 oz of parmesan and a couple of eggs cracked into the mixture. Lightly salt and add some chopped herbs.
