And fresh chilis diced, if no kids then keep seeds. Minced Garlic and fresh tomato. Using cumin, corriander, and ancho chili powders as well is better than the McCormick spice mixes IMHO.
I like yellow hominy as well.

I like to throw just a tad bit of cinnamon in mine. Never thought to use chocolate unless making a mole. And love the dark beer idea
