I know she went to Chicago recently and tried some real Chinese food so it's not like she's close minded or anything.

Was talking to the other guy. Being ignorant to a topic/food is one thing but just saying no because I only like pizza like a kid is another

It's not a matter of "growing up" for a lot of people. As you say, some simply are not exposed. It's never too late to try things and it's perfectly okay not to like everything.
You know her better than we do. I wouldn't start with lamb unless you know she wouldn't have a problem trying it. Might work that in later on at another meal after you've cooked for her once or twice and get more of a feel for how adventurous she is and maybe after she's had a chance to be more adventurous. I like the beef short ribs idea. Maybe some more adventurous sides like a roasted beet salad Lilette style, a quinoa dish or something along those lines. No need to shock her on every dish. It's no fun to cook a meal for someone and have them not enjoy at least something you made and it's no fun for the guest to leave hungry if there's nothing she might like. A balance would be good for the first time cooking for her and then you can go from there. Main thing is to make it a fun experience either way and it will probably go very well.

Yeah, definitely doesn't sound like my friend at all. I think she's getting to the age where she's eager to try new things and is interested in food.

I know two brothers(millionaires) that I cook for in the same family that use utensils like a six year old child would from a lack of being swatted at the back of the head by some random adult. Neither one would I have a meal with an adult woman in any manner as I would be too embarrassed by what she would see at the table.

I would stay away from any 'exotic' meats like lamb, I have had too many 'this poke chop sure do take funny' if I serve it to rubes.

I would guess she has had lamb as a lot of places here serve that. I may have over stated her limited exposure to food.
She just hasn't had a lot of things that you can usually only get in a larger city with a lot of dining options

Well, that's different! Lamb or a slow roasted salmon, then. I still think a roasted beet salad with goat cheese would be a nice salad option. Lilette's recipe is on the web. I've made it a number of times. Sometimes, I roast the beets and sometimes, I grill them.

Just trying to help, but I have had people who have not had lamb before think it tastes 'funny'.
I love the stuff, for someone with little exposure to good food stick to pork, chicken or beef. If you try seafood you better be careful, a lot of people do not like it.

But it's not that common in typical American cuisine. The Bible is based in the middle east. Our Western European ancestors didn't eat much of it and didn't pass the taste for it down. Damn, I'm wanting some lamb kebabs now....
