Pork shoulder, aka Boston butt, pulled pork, whatevs:

6.1 lb, mustard slather and rub:
9.5 hours later after apple/cherry smoke:
Looking good:
Pulled it @ 190 b/c wife was starving:
With Carolina sauce on bottom, habanero red drizzle on top, with or without pickles. I will not lie, shite was excellent with great bark:
I was happy with the new sugar maple lump, good sized uniform chunks and used less than 1/3 of the half fire box of lump in 9.5 hours in the Primo XL, pretty efficient.

The bark really look excellent. I have to restrain myself from picking off bark and eating it all when I'm pulling. That looks good.

The bark can be addicting, everyone probably suffers from that. Pulled pork is my wife's favorite BBQ, she does not like ribs much, her loss.

A mere tug was all she required. Really would have preferred to go to 192-195 but the wife was screaming for food and it was already 9PM so I gave in. My fault for starting it @ 11:30.
