I'll give it a shot next time I go there since it seems so many folks are into them.
Maybe I'm just wary of them because I had some brie fries app at a restaurant in Nola recently at the rec of Yelp users and the waiter, and they were terrible.

That would seem to get a little soggy, no?
I tried fries made with duck fat, which would seem to be good, but were a soggy mess. Two for two on this, maybe they didn't know what they were doing but I won't get them again.
