Pushing 8%+ on the acid malt could give you a little twang and that should match up nicely with the Rye.

My last beer I brewed was 10% acid malt. Has a very nice, subtle twang. It didn't have any rye in it, only pils and vienna.

I'm sipping on a farmhouse that has a 15% rye backbone and I'm digging it. I want to see how it plays with the acid malt.

My farmhouse wit taste really good going into the bottle, I'm very pleased with this.
