Rice & Gravy

Well, my weekend was almost a total wash. I spent most of Saturday in bed with an excruciating sinus headache. Except for about five hours I spent at my daughter's high school graduation. Got home and went straight back to bed. I couldn't even go out to dinner to celebrate.
Sunday was a little better but still a good part of the day in bed.
I did manage to squeak out cooking(usuallyI wouldn't cook while sick but I knew this was pretty much an allergy attack)some chuck steaks with rice and gravy.
Started off with seasoning the meat with granulated onion, salt and black pepper. Browned this up nicely and removed them to brown the onions.
After getting the onions browned and deglazing the pan with them.
Added water to disolve all that tasty goodness and create the braising liquid.
Then I put the meat into the liquid and onions and let that simmer until it was nice and tender. Fork tender actually!
Served with spinach(and chopped boiled egg)and cream style corn.

Yeesh, I have seen it all of my life, the yolk and spinach flavors combine very nicely.

Looks great. Except that would be called roast and gravy and not rice and gravy around here. The Chuck roast is making all that wonderful stuff happen. It should get the credit. Or at least a mention. The rice is the least worthy item of food on that fine looking plate you got there.
