One or two teams could have Friday open and not play at all that day under certain circumstances.
For example, if LSU wins its first two games (on Wednesday and Thursday), it doesn't play on Friday and won't play again until noon on Saturday.
It's been that way forever, even when it was an 8 team tournament (which again, it basically is this year starting on Wednesday). If you won on Wednesday and Thursday you got a bye til Saturday and only two loser's bracket games were played by Friday. Been that way for years and years.

Yeah the two undefeated teams in the old "bracket play" were always off on Friday and had to lose twice Saturday.
Now instead of two 4 team brackets you basically have a normal 8 team double elimination...but the last two undefeated teams still get Friday off and advance to the semifinal. Instead of playing each other once it reaches that point they each face a team with a loss.
And it goes back to single elimination on Saturday.
