Need Louisiana dishes for graduation party

Cooking for a friends graduation party. His family is all from the north and he wants them to experience the food from down here. I'm doing a big pot of jambalaya for sure. Maybe shrimp fettechini (sp) as well. Everything other than that is a toss up. Any suggestions?

I did 8 sacks of crawfish Sunday. Maybe consider some etouffee.

Étouffée is the one thing I haven't cooked but was seriously considering.

How about something grilled that you can do in advance (morning of) and then keep warm? I'm thinking fresh or smoked sausage or a stuffed pork roast or stuffed chickens. Andouille, cut on the bias and quickly grilled, makes a nice appetizer with a little whole grain mustard on the side.

Look in the TD recipe book for the shrimp and andouille mini muffin cakes. Delicious.
Crawfish cornbread
Mini crabcakes with remoulaude.
Gumbo
Okra and tomatoes-not in the gumbo
Seafood stuffed mirliton or eggplant
Fried gator
Roast beef poboys (get the right bread)
Fried shrimp/oysters
Shrimp or crabmeat maison
Look in the TD recipe book for corn and crab/andouille/shrimp or crawfish bisque

I'd ditch that also. Seafood fettucines make me think of a Yankee's way to deal with seafood. That's not necessarily true, but it's just not very interesting to me.

A nice app would be crawfish cardinale with toast points. It needs to be kept warm, but it's a mighty fine dish. It's also good served in puff pastry shells and, if you must, it can be served over pasta.
Crawfish or shrimp Monica is another one and it's served over pasta.
Crawfish bread is something lots of folks like. Not my fave because it's buried in cheese, but it's a decent app to put out for Yanks.

The crawfish cardinale sounds really good. Needed some dips or something that could be out while the major dishes are cooking. That one sounds perfect

It's in the Plantation Cookbook if you have that one. It might be in the TD book. I know Stadium Rat put some recipes from that cookbook in the book.

If you're not scared of another rice dish, you almost have to do a gumbo. Stuffed bellpeppers would be cool too.

Boudin balls would be some money apps to throw out there. I'd just pick up some good ones and heat them. Would save you some time and let you focus on the mains.
Also, if someone can man a grill, chargrilled oysters would be a treat.

I agree with this. Do jambalaya, crawfish pie and gumbo and play the song over and over again.
Seriously, if you're showing these folks Louisiana foods, gumbo is a given no matter what time of year it is. I'd have that before jambalaya, for sure.
