I have caught them with cotton rope. You tie it on with a worm weight above it and fray out the ends. They will strike it and get their teeth caught in the frayed rope. 
ETA: I was watching Bizarre Foods and they were at the Seminole Indian reservation. The Indians were smoking the whole gar and i must admit it looked pretty damn good. Had some whole choupique on there as well. Anyone ever try this?
