I know while living there I saw PLENTY of rabbits (at the time don't remember if jack or not) tons of Javelina, and heard quite a few coyotes. Also saw a few Mountain Lions.
ETA: for reference that's in about 5 years of doing a decent amount of hiking but no hunting to speak of. Also have herds of antelope (or is it gazelle? I get the two confused) running around the valley.
