Like Jackie Chan mentioned, champions are CONSTANTLY changing. Go back and watch older games from earlier seasons and you'll wonder what the frick are these guys doing play X champion.

Not only that, but the meta changes and with that, a champions usefulness and popularity change.

You don't have to buy a champion everytime you have enough IP, but it's good to have a decent sized pool of champs that can excel at each specific lane/role.

This makes you a more effective player and also teaches you how other champions work.

I know certain champions very well and the things that annoy me when I'm playing that champion. Because of that, when I'm playing against that champion, I know how to attack them.

yeah, I do understand that as well. Actually, I just carried a game with Trydamere, was freakin' awesome, so I'm down for learning more, but it appears I have found my "home" spots.

Though it appears it's easier to carry a team on your back if you are top, so it's probably stupid for me to not chose it more often
