I was just looking for this update myself. I'm sure beer misses you too. Sounds like you're keeping it up pretty well

Yeah. It really hasn't been too hard just yet. Chipotle is my new friend. Lunch there is paleo friendly, si I've had that quite a bit. Trying to branch out so I don't get burned out

I'm feeling good, I cheated and ate 5 croutons on a salad that's about it. I have had a little cheese and one white potato.
Other than that i've been sticking to it, drinking gluten free vodka with soda water and a splash of cranberry.
There was a two or three day stretch where I was excreting basically liquid, it wasn't the .best. But I think i'm past that

What do you get at chipotle?
Bowl with brown rice, both beans, peppers and onions, meat, salsa and lettuce?
Maybe some guac?

Lettuce, carnitas, all three salsas, and guac. Beans are off limits. Tell me about the gluten free vodka?

Yeah forgot about beans.
I doubt you'll have it down there, but it's called Buckeye Vodka. It's distilled 10 times and is made from spring water in the Miami valley. Its only $20 a bottle and tastes better than grey goose or kettle IMO. I think most all vodka is gluten free, I know Tito's is too. I'm not sure if there's anything else in them that might make them anti-paleo though.

Mainly lunch Chipotle has been my friend, but I'm burned out. I'm trying to cook enough for leftovers to break the spell

Are you a fan of salads? Spinach or lettuce salad loaded with your favorite veggies (cuc, tomato, avocado) and some boiled egg. Add nuts (almonds, pecans, cashews) and seeds (chia, sunflower) . Try not to smother it in dressing that isn't good for you. I make my own dressing with olive oil, Braggs apple cider vinegar, Braggs liquid aminos, salt and pepper. Or...
Veggies in nut butter or hummus (assuming hummus is okay for Paleo). I've come across many suggestions for kabobs. Pick your meat and veggies and make enough for all week. I've never made kabobs so I'm not sure of the cooking time/method. I'd suggest bell peppers, onions, and mushrooms. You could always bring a kabob and have a salad on the side.
Have you tried a stew? You could make a lot at a time and this would be easy to bring to work and reheat. Loaded with veggies and whatever meat you choose.
Beef and sweet potato stew???
Chicken salad, tuna salad... Easy to eat on the go. You can use cucumber as the bread. Just make tiny bite size sammies.
I'm all about the raw fruits and veggies (must be the vegan in me). Apples in nut butter. Celery with nut butter and raisins. Bananas, pears or oranges. All of these can be an add on.
Hope some of these helps. Sounds like you just need a little change.
Eta congrats on the 12+!

I'm still eating grains/dairy on Sundays. Mainly bc I am getting married in may and don't want the honeymoon to suck because of losing tolerance for those groups.
That said...I know Pinterest is a girl thing but I have found some great recipes there. I have to plan meals ahead, but now that I've stocked the pantry with paleo-friendly food it's been going well. I have actually gained about four pounds but lost inches - I also crossfit - which I expected.
Couple meal ideas if you want to google them.
Breakfast:
Paleo blueberry muffins (almond flour, eggs, couple other ingredients...from Cook Eat Paleo)
Huevos rancheros (fry an egg, top with a tomatillo green salsa)
Bacon
Paleo coconut bread
Sausage
Maple syrup is paleo
Pancakes (1 banana, 1 egg, blueberries and put in a pan...or look up a recipe with almond flour)
Lunch/dinner:
Paleo BLT (bacon, avocado or guacamole, tomatoes or rotel wrapped in lettuce) - FAVORITE LUNCH!
Rosemary mustard baked chicken (use yellow instead of Dijon...works well!)
Cauliflower crust pizza
Coconut shrimp
Burger (wrap in lettuce no bun)
Sides:
Paleo sweet potato casserole (sweetened with coconut and nuts)
Bacon-wrapped asparagus
Curry veggies
Snacks:
Avocado dip/guacamole
Bugs in a boat (celery with almond butter and golden raisins)
Lara bars (most are paleo - check ingredients)
Desserts:
Date balls
Fruit-based smoothies (make with almond or coconut milk)
You can make chocolate with coconut oil/honey/100% cacao, mix it with nuts and coconut, put in the fridge and have a candy bar!
As you can see...I'm not good at eating the same things too many times in a row.
