I've never left charcoal/smoking. I got the gas one for quick meals after work when I don't have hours needed to smoke something.

This weekend I learned that it is VERY different than what I'm used to. I broke it in with some steaks, veggies and garlic bread. Burnt the hell out of the bread. Veggies and steaks came out great though. Then yesterday I did some shrimp along with some veggie kabobs. I burnt the heck out the veggies on the kabobs. I think I need to put some things over a "dead" burner and let the neighboring burner provide some heat, but not directly under the food.

It was quite a blow to the ego to burn stuff as I can't remember the last time I've overcooked anything on my smoker.

I was really surprised how good the steaks came out on Sat though and it was so easy/fast to cook them.

I'm sure it has it's place... Just it ain't my back yard.
