I don't think gas is as hot as charcoal. But the heat is probably more even and consistent.

You might get an extra tank to have on hand so you always have one full?

Through years of crawfish boils, fish fry's and such I have accumulated around 8 tanks so I'm good in that department Lots of "oh shite" moments when the tank runs out and had to run to the corner store and buy an overpriced one.

Mine gets really hot and more importantly, does not drop in temp as much as charcoal when cooking fatty foods. I've had some ribeyes almost put my charcoal out. Gas just burns right on through.
