Chicken spaghetti

In the late '80s when I used to be a drug rep I had the teaching centers in Jackson MS as part of my territory. I used to bring lunches frequently to the residents and would have it catered.
Frequently, the residents would request a specific caterer called My Favorite Speghetti. They had this chicken spaghetti that was spicy and awesome. I was not very heavy, not a red sauce and had chunks of chicken and vegetables in it. Over the years I have searched the interwebz for recipes like this to no avail.
Anyone familiar with this place and would care to steer me in the direction of a similar recipe?

No, not really. I remember it having cubes of chicken, onions, garlic and maybe celery in it, but not sausage, although that looks good to me. It was not a tomato based dish. It was a little spicey and maybe had some cheese in it IIRC.

My SO makes something that sounds like this and it's horrible.

Now that I've looked at the "better" versions of this recipe, I think she just picked a bad one. She does it with Rotel tomatoes and Velveeta. I've seen better recipes now. Might be able to make it work.

I'll post a recipe Wed. It's my bedtime, I really don't consider the dish a favorite, and I need to get Momma's recipe for you if I can...the best I've had.

Nope. Chicken Tettrazinni is better, IMHO.
