Great that you're starting to cook. You'll learn your likes and dislikes and mistakes as you go along. That's part of it. You'll have to put up with the criticism here, but you'll learn a lot.
The bacon still looks uncooked so that dish wouldn't be one I would think to try, but you should try what you think suits your tastes.

There is an abundance of crock pot recipe information on the Internet. As you experiment, you will learn what to keep and what to throw away. And remember, as long as you are using fresh ingredients as opposed to prepackaged ones, you are traveling in a healthier (and tastier) direction.
And take some of the comments here with a grain of salt. Most of the advice offered is genuinely helpful even when it sounds like some are making fun.

I have a book called "Joe Simmer's Creole Slow Cookin'" that the OP would really enjoy, published by 2 Martini Press.
Lots of good recipes for soups, gumbos (don't kill ME), entrees, beans, veggies and sides.

And, stovetop or oven roux will be fine as long as it's not just browned flour.

Didn't take pics, forgot. It was good surprisingly. The apples tasted a whole lot better than I expected. Bacon didn't stay wrapped though.

Sadly, you're right but it would have been fun. I think you made a good choice not posting pictures.
Cooking bacon low and slow(which has already been cooked, most likely smoked) seems pretty counterintuitive to me. The reason people wrap things in bacon is to either keep structural integrity on things like jalapeno poppers, or other similar appetizers , OR to try and keep delicate things from burning on the outside before the interior is cooked.
Neither of those really apply here, the bacon was probably undercooked and rubbery, or severely lacked flavor because it was never browned properly. It just seems like a very odd recipe to put into a slow cooker to me.

Slow Cooker Pot Roast
You should make this. read the reviews and put your own twist on it like searing the roast pre-slow cooking, adding veges, definitely add herbs and spices.
That's a real slow cooker recipe imo. Ive never made anything in a crock pot though so.
