Both are great, but pan fried takes the cake for me.

Teal breasts (small) are good pounded thin rolled n seasoned bread crumbs and flash pan fried.....
We killed only big ducks today, so these were cut thin across the grain n small pieces, soaked n milk and hot sauce. They will b tossed n flour/garlic salt/tonys and fried n acast iron skillet.
The fries are baked to serve hot with hot duck!
