chop up half a bell pepper and half a white onion. season with a little garlic pepper and cook on a skillet in olive oil. make some white boy guac to go along with it. if you're feeling lucky, some spanish rice.

not Mexican but I think corn maque choux would go well with fajitas. add some chili powder and cumin for Mexican flavor.
