There was a high-dollar restaurant in Dallas that did this. It had 2 all-inclusive menus - The $50/person and the $85/person... dinner only. 20-22 tables and a small bar. Menu changed every day. Guest chefs out the wazoo. They said they would only be open for 2 years. Hardest seat to get in the city the last 13 or 14 months or so. Then - right on schedule - CLOSED. They made a fortune.
