i don't remember the conversation that specifically but i did find this which i think is a likely connection given GRRM's NYG fandom
quote:
And Wun Wun is a "Giant" who kills this allegorical Dallas Cowboy - which I assume is intentional as Martin is a monstrously huge Giants fan. So does Wun Wun's short-form name mean anything? It sounds suspiciously like "One One" and if that is true, the obvious reference there would be Phil Simms, legendary Giants QB with number 11 (a number that is now retired so it cannot refer to any current Giants players).

too bad he's not an LSU fan, then he would have a character described as:
"Ser Markis of House Rusell was a monster of a man. He had the coloring of a man whose ancestry could be traced to the Summer Islands which is likely where his House Sigil orignated as well. His Shield bore a grey hairless mammoth set on a crimson background, even though he had been fostered in the Death Valley of Dorn under the tutelage of Lord Les the Stutterer.
Ser Markis stood taller than all but the Mountain that Rides, but a more talented knight, you could never find. However, it was the knowledge of his own talent that led to his eventual downfall. After winning many lower tourneys his pride and fame became a poison to his work ethic and sense. He squandered all of his winnings on helms glistening with diamonds and clothing that would make even Ser Loras Tyrell blush. When his downfall started he turned to the Purple Milk of the Poppy to ease his struggles... which had the effect that one might expect.
After years of obscurity Ser Markis is attempting to return to the Tourney Circuit. However, with his current age and a belly that would make Ser Manderly blush, one must wonder if he'll ever have another chance at greatness..."
