Thing is I just don't see Gervinho or Ramsey actually helping to break down those pesky teams who sit back hunkered down and all.
I mentioned this when I saw the quote about Walcott still reaffirming he want's to play as a striker. His finishing and overall touch of the ball is better than Gervinho's. Let me clarify the touch bit, he isn't the best if you make him play with his back to the goal and try to get him to hold the ball up. You have to play him in through space, but unlike Gervinho he can actually get crosses past defenders. He's threatening enough that where he goes so too would defenders creating passing lanes and space for our midfielders behind him. And when he does face defenders and takes them on if he creates space he can turn in a shot.

I almost think Walcott as the striker could give us everything Gervinho gives, but he wouldn't stop play by dribbling into defenders. Not the biggest fan of Walcott, but he can certainly provide more than Gervinho.

Agreed that Ramsey is not fantastic at breaking play down yet. However, I think his indirect effect of freeing Cazorla to do so is an added benefit. Now, Ramsey has to be on his game and attract attention in order for Cazorla to be free. Against teams that park the bus, like your Stokes and Sunderlands, this play is almost useless. HOwever, in an open game where midfield control is vital, think his build up in the middle third is really good. He does still need plenty of work in attacking third.
As for Walcott...
He also cannot break down your Stokes and Sunderlands, but open play where he can get a quick turn and find an onrushing Pod or even Ox, it could be dangerous. Think we beat Man City last week if Walcott is in for Gervinho in the first half. That half was perfect situation for him.
