One Single Drink With Stella! Dessert Tasting - Which One?

Afternoon All,
Pretty soon, I'll be doing the dessert tasting only at Stella!, and I simply want to have one drink with it - but it cannot be wine or champagne (I don't like either of 'em).
Probably doesn't make sense to get anything sweet, since it will be a giant sugar rush.
So far, Irish Coffee is the only one that comes to mind.
Any other suggestions are greatly appreciated!

Had to google that.
I usually just drink coffee with dessert. Unless I'm getting a cheese/fruit plate or a sorbet, which in that case I'll have champagne or a glass of white wine.

The Sommelier there is a guy named John Mitchell. He is a young creative dude. A few months ago he was doing liquid nitrogen gin and tonics or something of that ilk. Ask him what to pair with it, that isnt wine or champagne, and I promise he will come up with something awesome.
